Born in Brittany and having worked as a consultant for other wineries Loic couldn't wait to start his own. With a total of 11 hectares bought in 2011 and spread between Savennieres and La Franchaie, Loic's motto is to bring the best of the terroir in his wines. Certified organic and non-interventionist Loic likes nature to take its own course. Grapes are exclusively picked by hand, and this is realized in several qualitative sorting operations.
Golden yellow in colour, very complex nose with honey, citrus, brioche and quince on the nose. Very bright and fresh with some nutty and toasted notes. On the palate the wine is powerful and structured. Good minerality, medium weight and a long finish.
Ideal with any fish, preferably with a strong flavoured spice or sauce. Swertbread or veal kidneys in a rich cream sauce will also complement the wine nicely, along with a locally produced goat or ewe cheese.
"Equilibre" belongs to the family of great nectars of gastronomy.
